In fact, everything here is inspired by the natural environment. Reclaimed wood features heavily in the rooms – whether it’s the headboards or in the showers. And they’ve thought of every last detail, from sustainably sourced bedding to yoga mats and in-room trees.
The same goes for the wining and dining. Farm-to-table cuisine is dished up in a trendy conservatory at 1 Kitchen. Flora Lounge deals in plant-based meals, while the immersive dining experience pairs Mexican and Mediterranean food with a side of DJs and live performances. The Fairmont is a bit of an icon on the Vancouver hotel scene. The Chateaux-style hotel, dubbed the Castle in the City, has been hosting guests since 1939 – even the Royals have checked in. But it’s anything but old on the inside, thanks to a $75 million revamp at the end of 2019.
In true grand style, the rooms feature a navy blue and gold colour scheme. And the Notch8 restaurant and bar is seriously stylish with an uber-modern chandelier, zebra-print bar stools, and brick walls. It’s not style over substance, though. There’s a raw bar serving oysters, mussels, caviar, and crab legs. And the cocktail menu features a unique concept, where drinkers let the dice decide on their cocktail construction. Plus, it wouldn’t be a five-star hotel without a pool, sauna, and fitness centre.
The postcode’s standout, as well. It’s minutes from Vancouver’s main shopping streets – Robson, Alberni, Burrard, and Granville. And historic Gastown is just a few blocks away.
